So I was wondering I am alwasy looking for a new recipe to make. It has to be simple, easy and not alot of work. Maybe like a Rachel Ray kind of dinner :). Please share your favorite recipes will everyone! Can't wait to try something new!

Alright you don't have to put just easy recipe up here share all! I am always looking for simple idea and always run out of what to make for dinner. I sure would love to hear about the baked fish sounds yummy.

As for Andi I am 50% Italian so i know Italian food is fattening that is what makes it so good!

So send those yummy recipe I would love to try something new!

I learned this one early. No real need for measures either!

6 Chicken Breasts
Large Jar of your Favorite Spaghetti Sauce.
1 16oz container of Ricotta Cheese
1 bag shredded "Italian" Cheese (Mozzarella, 3 cheese blend etc)
2 eggs
Italian Seasonings - to taste
Garlic Salt - to taste

Mix last 5 ingredients in bowl. Set aside.
Pound breasts flat between sheets of Plastic wrap.
Put large spoonful of the cheese mixture on breast. Spread thinly. Roll up breast in to a log.
Repeat until no more breasts.
Place rolled up breasts in greased baking dish
Put any remaining cheese mixture on top of rolled up breasts.
Cover with Jar of Sauce (All if you like it Saucy, less if you prefer)
Bake at 350 for 45-50 mins. Uncovered if you like the sauce thick.

Kids usually love it. Sometimes I add "extras" like more cheese on top, add things like mushrooms to the cheese mix...You can be very creative. It scales well too.

Now I'm hungry...

I'm making the chicken Dinner tonight adding some Pasta with it as well..

A nice Chianti and some Fava beans..
