I will be at clinicals from 8-4p civilian time, then homework. No green beer, no pinches, but there will be potato soup. I am Irish so I must have potato soup on St. Patrick's Day or I get all twitchy and such :)

Irish Potato Soup

There's nothing nicer than a thick, hearty soup to warm you up - and this St. Patrick's Day offering should be just the ticket.

Degree of difficulty: Low

You need:

2 lb Potatoes
1 large Onion
2 oz Butter
2 pints Vegetable Stock
1/2 pint Milk
1 tablesp Chives or Parsley
Nutmeg
pinch of Salt & Pepper
1 tsp Cornflour

Method:

Peel and cut potatoes in quarters and finely slice the onions.
Melt butter in a saucepan and add the Potatoes and Onions, cover and simmer for 10 mins (don't brown veg).

Add the Stock, Salt & Pepper and Nutmeg, Stir.
Cover and bring to the boil stirring continuously.

Reduce heat and simmer for 30 mins, until vegetables are soft, stir occasionally.

Remove from heat and put through a sieve, and return to the saucepan.
Stir in the milk and cornflour and bring to the boil, stir continuously.
Remove from the heat, serve with a sprinkling of chives or parsley.

My daughter's band was in the parade, which was the reason I made the trip. We had dinner at Giordano's with some of their famous Chicago Pizza. My sister had green beer and I had a green apple martini. We didn't drink anything at the parade, not with the long trip home awaiting us.

I usually make a green meal using green dye to make the mashed potatoes green, or use lots of green beans or broccoli, and desert is a mint milkshake or mint chocolate chip ice cream.
